I love grill cheese, and I love eggs.
Grill cheese should have a good cheese to break ratio (moar cheese is better).
I also like having the choice to have a light snack (well, as light a snack as a grill cheese with a fried egg in the middle can be).
This is a grill cheese with ONE slice of bread, a LOT of cheese, and a fried egg in the middle.

Ingredients for Grilled Cheese Egg in a Melba Hole. |

Bread | 1 Slice |
Young melty cheese, American, Gruyere, Mozzarella, Provolone, Gouda | 1 slice |
Flavorful cheese , e.g. Chedder, Parmesan Parmigiano-Reggiano, | 30g / 1 oz, shredded |
Egg | 1 |
Oil, or butter. | 4g or 1 teaspoon if using
non-stick pan More if you like, or have a sticky pan |
Black Pepper, other herbs | Optional |

Spatula | Or any flipping instrument |
COOKING
1) Lightly toast the bread
2) Slice it crossways, using the serrated knife.
3) Place cheese, while it is hot. Crack some pepper, or paprika if you like.
4) Cut a hole in the middle. Use a sharp knife, and be gentle with it. The melty cheese will help hold your egg together.
5) Place in your frying pan, over a medium flame.
6) Drop a piece of butter into the hole, or squirt some oil into the hole.
7) Drop the egg into the hole. I prefer to crack my egg into a bowl first, this makes it easier to slide the egg into the hole, and also lets me check that my egg is ok.
8) After a minute or two, flip.
9) Prod the middle of the egg, and see if it's wobbly. Decide how "done" you like your egg.
10) Remove and serve. Sprinkle black pepper / paprika if you like.
